Bologna ’s identity has primarily been created by centuries of exchanges and encounters with other cultures and nationalities, in particular with students and merchants. Since Mediaeval times, hospitality has always been fundamental in spreading throughout Europe the image of a rich, plentiful, strong urban centre; so much so that, for example, in 1566 a "provision" was published to prescribe the minimum food catering to be offered to visitors "for eating both in the evening and in the morning".
Similarly, with the specifications prescribed for restaurants , the DegustiBo brand identifies the dishes and ingredients which are essential to Bolognese traditional cuisine.
